Veggie Quinoa Chili

Ingredients 
2 C quinoa
1 can low sodium black beans
1 diced red onion
1 diced sweet potato
1 can pinto beans
1 chopped red pepper
1 chopped green pepper
1 c chopped tempeh (optional)
1/2 chopped mushrooms
2 cans low sodium tomato sauce
1 tbs olive oil
1 avocado and cheese as (topping)
1 tbs cinnamon
Cayenne pepper
1 packet stevia
* Serves about 5 people.

Cook quinoa according to directions and set aside. Place veggies, tempeh and olive oil, in a pan and sauté until tender. Mix all ingredients together with sauce and cook on low, add spices then serve with avocado and cheese!  ENJOY!

Chocolate Peanut Butter Hummus


I strongly believe that food processors are by far the best kitchen appliance available! A friend of mine left hers at my house and let me tell you, I have made so many yummy creations these past few days! One of which being Chocolate PB Hummus, Don't let the chickpeas and Pb throw you off, it taste delicious!!

Ingredients
1 can of low sodium chickpeas
3 tbs honey or maple syrup
1 tbs cinnamon
1/4 c natural PB
2 tbs cocoa powder
2 stevia packets ( if you want it really sweet) 
1 banana 

* Put all ingredients in your food processor and blend until smooth! Enjoy with fruit, on graham crackers, sandwiches, eat it like cook dough or add into smoothies!!
